Roasted Tofu and Vegetables

  • 1 6.5 ounce tofu cutlet (or extra firm tofu)
  • 2 Small zucchinis (large diced)
  • 2 Small yellow squash (large diced)
  • 1 Small onion (cut into 8 wedges; pieces separated)
  • 1 red bell pepper (cut into bite-sized wedges)
  • 2 Tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder


Step 1
Pre-heat oven to 400 degrees.
Step 2
Line a baking sheet with foil.
Step 3
Place all ingredients in a large bowl and stir well to coat each piece.
Step 4
Place on a foil-lined, rimmed baking sheet.
Step 5
Roast for 40 minutes; check halfway and stir if necessary to prevent sticking.
Step 6
Transfer to individual bowls and serve immediately.
