Sweet and Sour Pork

  • ½ cup apple cider vinegar
  • ½ cup water
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • ¼ cup cornstarch
  • ½ cup pineapple juice

Pork and Vegetables

  • 2 Tablespoons canola oil
  • 2 Pounds boneless pork loin (cubed)
  • ¼ cup low sodium soy sauce (if using regular soy sauce, omit the salt, below)
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 4 Tablespoons butter
  • 6 Large carrots (peeled; cut into ½-inch discs)
  • 1 20-ounce can pineapple chunks (drained, juice reserved)
  • 6 Small green onions (cut into ½-inch pieces)
  • 1 Large green bell pepper (cut into ½-inch slices)


Step 1
Prepare the sauce first by placing all ingredients into a large saucepan and bring to a boil.
Step 2
Cook until thickened; set aside.
Pork and Vegetables
Step 3
Boil carrots in salted water for a few minutes until softened slightly; drain and set aside.
Step 4
Place canola oil in a wok or large heavy bottomed skillet and brown the pork quickly over medium-high heat, about 4-5 minutes.
Step 5
Add soy sauce, salt and pepper and stir.
Step 6
Add butter.
Step 7
Add carrots, pineapple chunks, green bell pepper and onions.
Step 8
Quickly sauté all vegetables until crisp tender, about 4 minutes.
Step 9
Pour the sauce over all of the ingredients in the wok/skillet. Cook for 2- 3 more minutes, stirring to coat all vegetables and meat with the sauce.
