Roasted Root Vegetables

  • 3 Medium beets (peeled; large diced)
  • 2 Medium sweet potatoes (peeled; diced)
  • 4 Large carrots (peeled; thick sliced on a diagonal)
  • 1 Large red onion (cut into 8 sections)
  • 3 Tablespoons olive oil
  • ¾ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder


Step 1
Pre-heat oven to 400 degrees.
Step 2
Line a baking sheet with foil.
Step 3
Place all ingredients in a large bowl and stir well to coat each piece with oil and spices.
Step 4
Place all ingredients in a single layer on a foil-lined, rimmed baking sheet.
Step 5
Roast for 40 minutes or until vegetables are slightly browned and tender.
Step 6
Remove from oven, transfer to serving dish and serve immediately.
