Pan Roasted Beef Tenderloin

  • 1 3-pound beef tenderloin
  • ¼ cup olive oil
  • 1 tablespoon kosher salt
  • 1 tablespoon freshly ground black pepper
  • ½ cup prepared cream style horseradish
  • ½ cup sour cream
  • ¼ cup mayonnaise

Step 1
Pre-heat oven to 450 degrees.
Step 2
Trim and truss tenderloin with string, every 2 inches or so.
Step 3
Rub tenderloin with olive oil, salt and pepper.
Step 4
Heat a large oven-proof skillet over high heat.
Step 5
Sear all sides 1 minute each.
Step 6
Place the skillet into the oven and roast for 20 – 30 minutes, turning half way.
Step 7
When temperature reaches 130 degrees, as tested with a meat thermometer, remove from oven and cover with foil for 10 minutes to rest before cutting.
Step 8
Remove all string. Cut medallions approximately 1" thick.
Step 9
In a separate bowl, combine horseradish, sour cream, and mayonnaise.
Step 10
Serve beef with horseradish sour cream sauce on the side.
