Oatmeal Cookies with Nuts

Oatmeal Cookies with Nuts

Serves 20 - 24 large cookies

  • ¾ cup unsalted butter (room temperature)
  • 1 cup light brown sugar (packed)
  • 1 Large egg
  • 1 teaspoon pure vanilla extract
  • ¾ cup flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 3 Cups rolled oats
  • 1 cup walnuts (or pecans; toasted and chopped)

Step 1
Pre-heat oven to 350 degrees.
Step 2
Line two baking sheets with parchment paper.
Step 3
Place nuts on a baking sheet and bake for 8-10 minutes or until lightly browned and fragrant; let cool and then chop into pieces; set aside.
Step 4
Cream the butter and sugar together with a pastry blender or a mixer on low speed until smooth, approximately 2 - 3 minutes.
Step 5
Add the egg and vanilla extract and beat to combine.
Step 6
In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
Step 7
Add the flour mixture to the creamed mixture and beat until incorporated.
Step 8
Stir in the nuts and oats.
Step 9
For large cookies, use 1/4 cup of batter (about the amount in an ice cream scoop); space cookies about 2 inches apart on the baking sheet.
Step 10
Wet your hand and flatten the cookies slightly with your fingers so they are about 1/2 inch thick.
Step 11
Bake the cookies 12 - 15 minutes or until light golden brown around the edges but still soft and a little wet in the centers.
Step 12
Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.
