Grilled Pineapple

  • 1 fresh pineapple (trimmed, cored, and cut into round disks)
  • ½ cup rum
  • 1 teaspoon pure vanilla extract
  • ¼ cup sugar


Step 1
Combine the rum, vanilla, and sugar to create a marinade.
Step 2
Place the pineapple rounds in a cylindrical container and pour the marinade over the rounds. Marinate for one hour.
Step 3
Pre-heat a barbecue grill to medium-high heat. Oil the grill grate with cooking spray or oil.
Step 4
Remove pineapple rounds from marinade and reserve marinade.
Step 5
Grill, basting frequently with the rum marinade, until the pineapple is slightly charred and a bit tender.
Step 6
Cut into bite-size pieces.
Step 7
Serve with a toothpick in each.
