Fruit Pizza

Ingredients

Crust

  • ¾ cup butter (1½ sticks)
  • 1½ Cups flour
  • ½ cup powdered sugar

Filling and Fruit Topping

  • 8 Ounces cream cheese
  • ½ cup sugar
  • ¾ teaspoon pure vanilla extract
  • 1 Pint strawberries (sliced)
  • 1 Pint raspberries
  • 2 kiwis (peeled and sliced)
  • 1 Pint blueberries
  • 2 11-ounce cans mandarin oranges (drained well, reserving juice for glaze)

Glaze

  • 1 cup mandarin orange juice
  • 1 tablespoon lemon juice
  • 2 Tablespoons cornstarch
  • ½ cup sugar

Directions

Crust
Step 1
Pre-heat oven to 350 degrees.
Step 2
Cut butter into pats.
Step 3
Mix all ingredients using a fork or pastry blender until the chunks of butter are no more than pea-sized.
Step 4
Press this mixture into a buttered rimmed cookie sheet.
Step 5
Bake for 15 minutes, until slightly brown; let cool.
Filling and Fruit Topping
Step 6
Using a blender on low speed, mix cream cheese, sugar and vanilla until well blended.
Step 7
Using a large spatula, spread over cooled crust.
Step 8
Place strawberries, raspberries, kiwis, blueberries and mandarin oranges over filling.
Glaze
Step 9
Combine glaze ingredients in a small saucepan and cook on medium heat until medium thick, but still able to be poured.
Step 10
Pour over fruit; refrigerate at least one hour.
