Fresh Corn, Tomato, and Avocado Salad

  • 6 Ears corn
  • 1 Pint grape tomatoes (or cherry tomatoes; halved)
  • ½ cup red onion (thinly sliced)
  • 1 Large avocado (cut into ½‘’ cubes)
  • ⅓ cup fresh basil (chopped)
  • 2 Tablespoons seasoned rice vinegar
  • 1 teaspoon Dijon mustard
  • ¼ cup olive oil
  • ½ teaspoon salt
  • freshly ground black pepper (to taste)

Step 1
Cut kernels off cobs and put them in a salad bowl.
Step 2
Add tomatoes, onion, avocado, and basil to the bowl.
Step 3
In another small bowl, combine all other ingredients to make the vinaigrette.
Step 4
Pour dressing on salad; toss gently to combine.
Step 5
Refrigerate for 1 hour and up to 4 hours before serving.
