Eggplant Caprese Appetizer

  • 1 Large eggplant (cut into 12 slices about ½)
  • 12 Slices tomatoes (each cut about ¼)
  • 12 Leaves fresh basil
  • 12 Slices fresh mozzarella cheese
  • ¼ cup olive oil
  • salt (to taste)
  • pepper (to taste)

Step 1
Lightly sprinkle the eggplant slices with salt on both sides.
Step 2
Place them in between 2 plates with a top weight.
Step 3
Let eggplant drain for 1 hour; pat the eggplant dry.
Step 4
Grill eggplant on a grill or on the stove in a hot pan or griddle on medium-high heat for a few minutes on each side until tender.
Step 5
Arrange eggplant slices on a plate; put mozzarella, tomato and basil leaf on each slice.
Step 6
Drizzle with oil.
Step 7
Season with salt and pepper.
