Crab Quiche

Ingredients

  • 1 cup Swiss cheese (shredded)
  • 1 9-inch pastry shell
  • 1 cup crabmeat (fresh; cooked or 7-ounce can, drained)
  • 2 green onions (sliced)
  • 3 eggs (beaten)
  • 1 cup light cream (or half and half)
  • 1 teaspoon lemon zest
  • ½ teaspoon salt
  • ¼ teaspoon mustard powder
  • fresh Italian parsley (for garnish)

Directions

Step 1
Pre-heat the oven to 350 degrees.
Step 2
Place cheese evenly over bottom of pastry shell.
Step 3
Top with crabmeat.
Step 4
Sprinkle with green onions.
Step 5
Combine eggs, cream, lemon zest, salt and mustard powder.
Step 6
Pour evenly over the crab.
Step 7
Bake about 50 minutes or until set and slightly brown on top.
Step 8
Allow to stand 10 minutes before slicing.
Step 9
Garnish with parsley.
