Chocolate Lava Cakes

  • 6 Ounces semi sweet chocolate chips
  • 10 Tablespoons butter (1¼ sticks)
  • 3 Large eggs
  • 3 Large egg yolks
  • 1½ Cups powdered sugar
  • ½ cup flour

Step 1
Butter well six ramekins.
Step 2
Melt chocolate and butter in medium sauce pan over low heat. Set aside to cool slightly.
Step 3
In a large bowl whisk eggs and egg yolks. Whisk in sugar, then chocolate mixture and flour.
Step 4
Pour batter equally into the ramekins; cover and chill for at least one hour and up to one day.
Step 5
When ready to bake, pre-heat oven to 450 degrees. Remove cakes from refrigerator.
Step 6
Bake cakes on cookie sheet until sides are set, but center remains runny, about 14 - 18 minutes.
Step 7
Remove from oven and run a thin spatula or small knife around cakes to loosen. Turn cakes upside down on to plates and allow to cool for 5 minutes before serving.
