Cauliflower-Potato Mash

Ingredients

  • 8 Cups cauliflower (florets, rough chopped into 1” pieces)
  • 4 Cups Yukon Gold potatoes (peeled and chopped into 1” dice)
  • 6 Cups chicken broth (or chicken stock)
  • 4 Tablespoons butter (½ stick)
  • 1 teaspoon salt (or to taste)

Directions

Step 1
Put cauliflower and potato pieces into a large saucepan and cover with broth.
Step 2
Bring to a boil and cook with lid on for 10 minutes or until potatoes are tender.
Step 3
Drain all of the broth.
Step 4
Mash with a potato masher until rough mashed.
Step 5
Add butter and salt.
