Asparagus Salad with Strawberries

  • 6 Cups water (boiling)
  • 1½ Pounds asparagus
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • 1 Pound strawberries (washed; stems removed, cut in half if large)


  • 4 Tablespoons strawberry vinegar (or red raspberry vinegar)
  • ¼ teaspoon Hungarian paprika
  • 6 Tablespoons canola oil

Step 1
Wash asparagus, trim the ends, peel if desired and cut into 2-inch pieces.
Step 2
Wash strawberries, cut into quarters.
Step 3
Blanch asparagus in boiling water about 5 – 8 minutes or until asparagus is soft.
Step 4
Plunge asparagus into ice water to stop cooking and retain bright green color.
Step 5
Dry asparagus and place in a bowl.
Step 6
Add crushed red pepper flakes and salt. Mix well.
Step 7
Add strawberries.
Step 8
In a separate bowl, whisk together vinegar, paprika and oil.
Step 9
Pour dressing over asparagus and strawberries. Toss and serve.
